Shivam Shahi, Co Founder of Blue Tokai Coffee Roasters, said Hyderabad’s curiosity for specialty coffee has driven the brand to open two flagships in under six months, with nine stores already active and 10 more planned.

Blue Tokai Coffee Roasters has opened its second Origins flagship store in Hyderabad at Banjara Hills, expanding its specialty coffee experience in a city where the brand has seen rapid growth.
The new space, called Blue Tokai Origins, is designed around deeper coffee discovery, bringing together rare Indian micro lots, multiple brewing formats, chef curated food, and community led programming. The launch follows the brand’s growing presence in Hyderabad, where it has opened nine stores since November.

Shivam Shahi, Co Founder, Blue Tokai Coffee Roasters, said, “Hyderabad is the only city where we’ve opened two flagships in under six months. People here don’t just want a great cup, they want to understand what goes into making one. That curiosity is what makes us want to build here, for the long run.”
At Origins, guests can explore coffees from Indian estates, regional terroirs, and different brewing methods. The space also reflects Blue Tokai’s farmer first approach by highlighting producers, origins, and the craft behind each cup.

A key feature of the store is the Play Bar, where experimental coffee lots are frozen at peak flavour and preserved in a temperature controlled setting. The rotating selection is curated by Blue Tokai’s roasting team and changes each month. Previous features have included micro lots fermented with farm grown cultures, coffees aged in wine barrels, lots sourced from emerging origins such as Meghalaya, and coffees co processed by smallholder farms.
Guests can also experience seven brewing methods, including Chemex, Syphon, and Slow Drip. The store also includes a Nitro Cold Brew tap serving chilled nitrogen infused single origin cold brew made using patented extraction technology.

The food menu at Origins has been curated in collaboration with Auroni Mookerjee, whose experience includes work with chef Ritu Dalmia’s Diva Group in Delhi, Sienna Store and Cafe, and The Salt House in Kolkata. The menu includes handmade pastas such as Chilli Crunch Carbonara, club sandwiches, open faced toasts on sourdough by Suchali’s Artisan Bakehouse, and desserts such as tiramisu and Coconut Berry Lamington.
The Banjara Hills flagship is also being positioned as a community space for Hyderabad’s coffee enthusiasts. Blue Tokai plans to host cuppings, workshops, cultural events, and interactions that bring growers, brewers, and coffee drinkers together.

Shivam Shahi said, “Origins is for anyone who wants to slow down and know coffee better. Whether through conversations with baristas, curated tastings, or a meet and greet with producers, it is a space that connects growers, brewers, and drinkers. Questions are very welcome here.”
With different formats across the city, Blue Tokai said its Hyderabad stores are catering to varied customer needs. While Sattva Knowledge Park draws customers for americanos and breakfast options, Gandipet sees visitors coming in for shareable meals. Its Jubilee Hills and Banjara Hills flagships are designed for customers who want to explore coffee in greater detail.
Shivam Shahi added, “Hyderabad has felt like home since our first cafe here. We love being a part of the city’s different rhythms, and in the coming six months, the plan is to launch 10 more spaces.”
