Aakhol has opened in Hyderabad's Kokapet, bringing authentic Assamese home style cuisine, traditional recipes and a cultural dining experience inspired by the heritage of Assam.
Founded by Dr. Alpaxee Kashyap and Akhil, the restaurant in Kokapet brings traditional Assamese recipes, regional ingredients and a dining experience inspired by the warmth of an Assamese home.
Hyderabad, July 2026: Hyderabad’s growing interest in regional Indian cuisines has welcomed a new addition with the opening of Aakhol, an Assamese restaurant in Kokapet that introduces diners to the traditional flavours, culinary heritage and hospitality of Assam.
Founded by Dr. Alpaxee Kashyap and her husband, Akhil, Aakhol has been created as a home style dining destination that celebrates the simplicity and authenticity of Assamese cuisine. The restaurant reflects the founders’ effort to introduce Hyderabad to recipes that remain deeply rooted in the food traditions of Northeast India while preserving their original character.
The restaurant also carries forward a family legacy associated with food and hospitality. Dr. Alpaxee’s maternal grandfather established Laxmi Cabin in Guwahati’s Fancy Bazar in 1942, a sweet shop known for its samosas and long standing presence in the city. Her parents later founded Aarian Woods, a boutique resort in Guwahati, continuing the family’s connection with hospitality.
After relocating to Hyderabad in 2019, Dr. Alpaxee found herself searching for authentic Assamese food but was unable to find the familiar flavours she had grown up with. This led her to start Aakhol in 2025 as a home kitchen, preparing Assamese meals that were available on a one day pre order basis.
The venture gradually attracted a loyal customer base that included members of the Assamese community as well as Hyderabad residents interested in exploring regional Indian cuisines. Encouraged by the response, the founders decided to establish Aakhol as a full service restaurant.
Dr. Alpaxee Kashyap, Founder, Aakhol, said, “When I moved to Hyderabad, I realised I missed more than just the food. I missed the feeling of home. Aakhol is our way of sharing that feeling with the city while giving fellow Assamese a place they can call their own. We hope every guest leaves with a deeper appreciation of Assam’s cuisine, culture and hospitality.”
The restaurant follows traditional Assamese cooking methods and does not alter recipes to suit regional preferences. Instead, it focuses on preserving the original flavours by using fresh ingredients, subtle spices and time honoured preparation techniques. Mustard oil, green chillies and seasonal produce are used to complement the natural taste of each dish rather than dominate it.
The menu includes a range of Assamese specialities such as Bamboo Shoot Fish, traditional pork and chicken preparations, vegetarian and non vegetarian Assamese thalis and regional accompaniments including dali bota, fish chutney and sesame chutney. Guests looking for stronger flavours can also request bhoot jolokia achaar.
To maintain authenticity, ingredients including bamboo shoots, xoru aloo and kaji nemu, a citrus fruit widely associated with Assam, are sourced directly from Guwahati.
Desserts feature traditional Assamese preparations including White Payokh, Black Payokh and Pati Sapta Pitha, completing a menu that reflects the region’s culinary traditions.
The dining experience extends beyond food. Inspired by the architecture of Dr. Alpaxee’s grandmother’s home in Bharalu, Guwahati, the restaurant recreates the atmosphere of a traditional Assamese household. The interiors feature handcrafted décor, a legacy wall highlighting the family’s journey and a library with contemporary Assamese literature and books on the region’s cuisine and culture.
Through Aakhol, the founders aim to introduce Hyderabad not only to Assamese food but also to the traditions, stories and hospitality that define the region, offering diners an opportunity to experience one of India’s distinctive culinary cultures
