Sugar, any of several sweet, colorless, water-soluble chemicals found in seed plant sap and mammalian milk that comprise the most specific category of carbohydrates. Sucrose, a crystalline tabletop including manufacturing sweetener utilized in meals and beverages, is the most prevalent sugar. Sugar is a chemical word that refers to all carbohydrates with the general formula Cn(H2O)n. Sucrose is a disaccharide, or double sugar, made up of glucose and one molecule of fructose. The rubric C12H22O11 interprets sucrose because one molecule of water (H2O) is lost in the condensation step connecting glucose to fructose. Sucrose is present in virtually all plants, but only sugarcane (Saccharum officinarum) and sugar beets have high enough concentrations to support economic recovery (Beta vulgaris). The former is a large grass that grows in tropical and subtropical climates, while the latter is a root crop that grows in temperate climates. Sugarcane has 7 to 18% sugar by weight, whereas sugar beets have 8 to 22% sugar. Sucrose from either source (or two smaller heads, the sugar maple tree, and the date palm) is the same molecule, producing 3.94 calories per gram like other carbs. Differences in sugar products are caused by additional components that have been separated from sucrose.
Harvesting and delivering cane Sugarcane is usually collected during the colder months of the year. However, it is harvested all year in Cuba, the Philippines, Colombia, and other ideal locations. Hand harvesting of up to two-thirds of the world’s cane crop is done with long machetes. However, mechanized harvesting has developed since the 1940s. Cane is burned before or after harvest to drive away rats and snakes and burn off leaves and garbage that dull knife blades, but environmental concerns lead to the harvesting of whole unburned cane in many places. On the other hand, sugar beets can be preserved and are hence often converted into white sugar in a single stage.
