Profile of: Mr. Gaurav Gidwani, F&B Head, BrewDog India
The rustic chef with a distinct sense of humour, Chef Gaurav Gidwani is no stranger to the land of food and hospitality. Having recently joined Ace-Aloha Group as F&B Head for BrewDog India, Gidwani’s illustrious 21 year long career spans many continents as a culinary expert, travel buff and media critic / host.
Having grown up in a hybrid family that blended multiple cultures and childhoods, his biggest culinary inspirations are his mother’s family meals that were always delectable yet explorative in nature.
Each meal highlighting a unique and distinct taste that would, in his later years, lend itself greatly to develop his culinary sensibility, Chef Gidwani prides himself in mixing and matching ingredients from regional cuisines from across the globe to create his own signature ‘Gidwani touch’ to anything that is comfort food.
Armed with multiple specializations from The American Hotel and Motel Association post his graduation from Rizvi College of Hotel Management in Mumbai, Gaurav has worked in prestigious five star hotels such as The Orchid, ITC Grand Maratha Sheraton and Hyatt Regency where his fan following preceded his unusual approach to food.
He then went on to join an airline catering company serving the royal families of Saudi Arabia, where he was able to further experiment with international foods that were Indian at heart. India beckoned him passionately where he, upon return went on to gain further experience working for popular stand-alone Indian restaurant chains such as Impresario (Mocha, Social), Mirah Hospitality and Glocal to name a few.
Having reviewed ace restaurants like The Noble House (The Raffles Dubai), Indigo (Grosvenor House), Sukothai (Le Meridien Garhoud), Fakhrelddin (Movenpick Bur Dubai), Shahrzad (Iranian restaurant Hyatt Regency Dubai) and many others. He went on to make his television debut as a food critic in the show ‘Eating Out – Season 1’ for Sony Entertainment in Dubai.
In the year 2012-2013, Mr. Gaurav worked on the most exciting project of his career: a beer and burger pairing which was a huge hit with the audience instantly.
Having hooked on the trying various beers, he moved slowly to craft beers and developed a knack for creating dishes and menus which complimented various styles of craft beers. When asked about his recommendation on a fab food and beer pairing, he suggests one to have red meets with their wheat beers.
Having travelled the nook and corners and lesser explored territories and food of India, he chooses hyperlocal cuisine over international cuisine. He believes the Indian food market has a lot unexplored potential than what is already available in the market.
While working on BrewDog India, Gaurav made sure he maintains a good mix of International influence of the brand and plugging in few local bar favourites which are a must be in India. He confidently says that the menu is BrewDog standards + local favourites amalgamated beautifully.
When not at work, Gaurav likes to spend time with his family and enjoy meal from places which are like hole in the wall.
